Put an End to Eating Lots of Junky Food at Parties, Bring Along this Dish and Enjoy Something Tasty & Healthy too!

Love getting together and catching up with friends at summer outings, but sometimes dread eating some of the yucky, less then good for you food that’s sometimes the only thing available to eat?

Remedy: Bring along something healthy that you’ll enjoy eating, other’s will enjoy and it tastes great as well!

Here’s a tasty dish I came across in the Southern Living- July 2010 issue:

(I’ve adapted it slightly to make it even healthier!)

Heirloom Tomatoes with Fresh Peaches, Goat Cheese and Pecans

-Whisk together 1/3 cup white balsamic vinegar; 1 garlic clove, minced; 2 Tbsp. agave nectar; 2 Tbsp olive oil; 1/8 teaspoon sea salt.

-Stir in one large peeled and diced fresh peach and 2 Tbsp. chopped fresh basil. Spoon over sliced heirloom tomatoes (about 2lb); top with 3oz crumbled goat cheese and 1/2 cup coarsely chopped toasted pecans. Sprinkle with freshly ground pepper to taste.

Easy, healthy and yummy, what could be better then that?

Refuel Your Mojo With this Easy SLOW DOWN Tip

Have you been slowing down this summer?

Doing a little picnicking, frolicking in a lake or pool?

Spending more time outdoors with friends or family?

If so- GREAT!

If not, it’s time to make it happen.

Summer just beckons us to slow down.

And actually, it’s extremely important to slow down.

When you spend your time in constant go-go-go mode you burn yourself out, your health falters, you feel crankier, you have less patience for loved ones and you start to dislike your life, feeling like it involves too much stress and pressure.

How to counter this?

With a healthy dose of SLOW DOWN time.

Reserve time for yourself each week to slow down (marking your calendar will ensure this happens), and take this precious time either by yourself or with friends and family. Make sure whatever you do, it involves ZERO work for you. No inviting friends over and then making a big feast to share. Nope, that’s not slowing down. You must completely cut out the “to dos” to make this work.

A better spin on inviting friends over, you pick up the take out food, they pick up the drinks and you just hang out, listen to music and talk!

Now this is just one of several ways to shift into slow mode and recuperate from a busy life.

My next couple video tips will be dedicated to providing more “taking it SLOW” ideas.

Everyone to one degree or another has compared themselves to others.

It’s hard not to when you’re surrounded by a world of people with so much competition going on.

As we grow up in this world, it becomes easy to succumb to this way of thinking & questioning yourself…”Do I measure up?” “Am I fast enough?” “Am I smart enough?” “Am I fit enough?” On and on…

The answer is a hands down YES you are. Even if you don’t believe it in this moment, you absolutely are fast enough, good enough, smart enough & you certainly measure up!

Comparing yourself to others is a sure way to hold yourself back- BIG Time, it causes you to feel limited in your potential!

And since we’re all here to move forward and evolve, your best bet is to learn how to overcome this comparison thing.
