Dare to Be You Yummy Healthy Recipe:
My husband and I just made a DELICIOUS corn bread stuffing last night! Oh man, you’ll want to try this! This recipe is not only super tasty, but it can easily be made GLUTEN-FREE! That’s how we opted to make it.
Actually, I came across this recipe on the back of a box of Gluten Free Pantry Yankee Cornbread & Muffin Mix.
We baked the cornbread last night (you can buy cornbread if you’re looking to save time!) Then we followed this fairly simple recipe:
Delicious Cornbread Stuffing:
Saute’ in 2 tbsp olive oil, 1 large onion, chopped, and 1 large apple peeled and chopped. Add 1 lb of turkey sausage, casing removed, sausage crumbled. (Skip sausage if you want a meat-free version). Saute’ until no longer pink. Add 2 tsp poultry seasoning, salt, pepper; 6 cups crumbled prepared cornbread (sugar omitted!), and 1 cup of chicken broth. Mix. Bake in covered, greased casserole dish at 350*F for 1 hour or sue to stuff a 12-18 lb turkey.
